Chestnut, Pumpkin & Orange Soup

Ingredients
3 tablespoons of Cooking Oil
3 Shallots, chopped finely
3 cloves of Garlic, crushed
500 grams of Pumpkin, peeled, seeded and chopped
500 grams of Crumbed Chestnuts
300 mls of Vegetable Stock
300 mls of Fresh Orange Juice
Zest of 1 Orange
1 teaspoon of fresh grated Ginger
1 teaspoon of Paprika
Salt and Black Pepper to taste
Method
Soften the shallots in the cooking oil.
Add the pumpkin and the garlic.
Cook for 3 minutes.
Add all of the remaining ingredients, cover and simmer until the pumpkin is tender.
Stir occasionally to prevent sticking.
Once cool place into a blender and process until smooth.
Reheat, season to taste and serve with sour cream.
