Chestnut & Pear Cake

This is such an easy recipe and so delicious that even our daughter who is not keen on chestnuts, loves it. I’m sure it will be your favourite after you try it. Best of all it is gluten free .



1 cup (250mls) canola oil

3 eggs

1½ cups (330gm) caster sugar

1tsp vanilla essence

2 cups (300g) Chestnut Flour

½ tsp baking soda

1 tsp baking powder

¼ tsp ground allspice

1 tsp cinnamon

2 large ripe pears.



Preheat the oven to 180°C(160°C fanbake)

Grease a 23cm cake pan, and line with baking paper.

Peel and chop the pears.

Beat the eggs and oil together until light and frothy.

Add the sugar and vanilla essence and beat again.

Sift the dry ingredients and add to the mixture with the pears, stirring gently.

Spoon mixture into the prepared pan. Smooth the top and bake for about 1 hour, or until an inserted skewer comes out clean.

If the cake is browning too quickly, cover with tin foil for the last 15 minutes.

Cool the cake in the pan.
