Yum! Yum! Yum!
2 egg whites
1/2 cup chestnut crumbs
3/4 cup coconut
1/2 cup sugar
1/4tsp vanilla essence
Preheat oven to 150 C and line two baking trays with baking paper, or grease lightly.
Beat egg whites and salt until they are stiff, and gradually beat in sugar. Fold in the remaining ingredients.
Drop the mixture in teaspoonfuls about 2 in/5cm apart on the baking tray.
Bake for about 20 minutes, rotating halfway through. Cool on wire racks and store in airtight container.
They are nice drizzled with melted chocolate, or joined with chocolate or orange flavoured icing.
